Banana Caramel Dumplings

3/4 cup brown sugar
235gm or 2/3 cup golden syrup
500ml water
40g butter
1 tsp cinnamon

40gm butter
1 1/3 cup of SR Flour
90g golden syrup (extra)
1/4 cup milk
1 medium banana (mashed)


  1. Place brown sugar, golden syrup, water, cinnamon and 40 gm butter in a large saucepan, stir over low heat until sugar dissolves. Bring to a simmer and simmer for 2 mins.
  2. Meanwhile place flour in a bowl, rub in 40gms butter with fingertips. Stir in extra golden syrup and milk and mashed banana.
  3. Drop level dessertspoons of dumpling into simmering sauce. Cook Covered for 15 mins or until dumplings are puffed and cooked.
  4. Serve dumplings with sauce. (ice cream is a great addition if you are being a little naughty)
