Ingredients
2 tbsp oil
4 garlic cloves, finely minced
1.5 tbsp ginger, finely minced
1 onion, finely chopped
2 tbsp curry powder
1/2 tsp tumeric powder
1/2 tsp cayenne pepper
pinch of salt and pepper
1 can of lentils
1 can (400 ml) coconut milk
1 can tomato, crushed
2 cups (500 ml) water
optional to serve greek yoghurt
Method
- Place oil in large saucepan (3 litre) on medium heat. Add onions, garlic and ginger. cook until tinged golden and onion soft.
- Add spices and cook for 1-2mins.
- Place all other ingredients and stir well. bring to simmer , place on lid and simmer for 20 mins, stirring occasionally, to ensure it does not stick to bottom of pan.
- Remove lid and simmer for 10 mins to reduce sauce . (lentils should be soft and sauce thickened and creamy.
- Serve in bowl with greek yoghurt.
