Mushroom and Potato Soup

2 tablespoons of oil
1 Brown onion
1 garlic clove
1 tsp dried thyme leaves
400 gm Potato peeled and chopped
250 gm mushrooms sliced
4 tsp of vegetable stock powder (bag 1) mixed with 4 cups of water
Optional Cream to serve
Salt and Pepper to taste


  1. Heat oil in large saucepan over medium heat add onion, garlic and thyme, cook, stirring for 5 minutes until onion is soft. Add potato and cook 5 minutes, until potato starts to soften.
  2. Add the mushrooms and stir over heat for 3-5 mins, add vegetable stock mixed with water, bring to boil. Reduce heat to medium and boil gently, stirring occasionally, for 7-10 minutes.
  3. Blend or mash to desired consistency. Return to heat and simmer until warmed through. (do not boil) Add salt and pepper to taste.
  4. Ladle into bowls if adding cream swirl in bowl before serving.
  5. Serve with crusty bread.
