2 tablespoons of oil
1 Brown onion
1 garlic clove
1 tsp dried thyme leaves
400 gm Potato peeled and chopped
250 gm mushrooms sliced
4 tsp of vegetable stock powder (bag 1) mixed with 4 cups of water
Optional Cream to serve
Salt and Pepper to taste
- Heat oil in large saucepan over medium heat add onion, garlic and thyme, cook, stirring for 5 minutes until onion is soft. Add potato and cook 5 minutes, until potato starts to soften.
- Add the mushrooms and stir over heat for 3-5 mins, add vegetable stock mixed with water, bring to boil. Reduce heat to medium and boil gently, stirring occasionally, for 7-10 minutes.
- Blend or mash to desired consistency. Return to heat and simmer until warmed through. (do not boil) Add salt and pepper to taste.
- Ladle into bowls if adding cream swirl in bowl before serving.
- Serve with crusty bread.
