Community Plus+ Cook-A-Long

They say food is the great connector. We agree, there’s nothing that brings people together quite like food! Inspired by the tasty creations coming out of the Yeronga Community Kitchen, comes the Community Plus+ Cook-A-Long!

Ingredients

  1. A Community Plus+ Cook-A-Long Recipe pack – these are available to pick up from Yeronga Community Centre and will include the recipe, and most or all the ingredients required to create the recipe.
  2. $5 donation for the cost of the ingredients – all funds raised will go directly back into our ‘Food with Thought’ program to provide delicious hot and cold meals for vulnerable people in the community, and to purchase food items for our community pantries in West End and Yeronga.
  3. 1 teaspoon of salt and sugar – come oooon you know it tastes better!
  4. 1 phone camera – to take a picture and/or video of your CP+ Cook-A-Long and share it back with us on Facebook or Instagram.
  5. 1 or more tummies – to fill with yummy food.

Method

  2. Pick up your $5 recipe pack from Yeronga Community Centre [Please link to google maps].
  3. We’ll let you know if you need to get any additional ingredients on the Social Media posts.
  4. Document your process – we want you to have fun! Unleash your inner masterchef!
  5. Send us your best snaps/vids and let us know how tasty your version was.
  6. Repeat the following week!

Quick & Easy Apple Crumble

Prep Time: 10mins     Cook Time: 25 mins     Total Time: 35 mins

Ingredients

Filling
3 medium apples peeled cored and diced
1 tablespoon lemon juice
1 tablespoon sugar
1/4 cup water

Crumble Topping
1/3 cup plain flour
1/3 cup sugar
1/3 cup rolled oats
60g butter chopped
1/2 tsp cinnamon

Directions

  1. Preheat oven to 180C/160C fan-forced. Combine apples, lemon juice, sugar and water in an 3 cup capacity ovenproof dish.
  2. To make crumble, combine flour, sugar, cinnamon, oats and butter in bowl. Use your fingertips to rub the butter into the flour mixture until the mixture resembles breadcrumbs.
  3. Sprinkle crumble mixture over the apples. Bake in over 20-25 minds or until golden. Serve warm with ice cream or whipped cream.

Quick & Easy Apple Crumble

Tuscan Chicken with Beans

Prep Time: 15 mins     Cook Time: 45 mins     Total Time: 60 mins

Ingredients

1/4 c. plain flour
1/4 tsp. each salt and pepper
4 chicken thighs
2 tsp. oil
1 medium onion sliced thin
2 carrots sliced thin
1 capsicum sliced thin
2 garlic cloves
1 can tomatoes
2 tsp of stock mixed with 2  cups water (bag 2)
1 can cannellini beans

Directions

  1. Heat oven to 180°c. In a bowl, combine flour with salt
    and pepper. (Bag no 1) Coat chicken in flour mixture. Heat oil in pan. Add
    chicken and brown. Remove chicken to a plate.
  2. Stir onion, capsicum and carrots in same pan you cooked the chicken. Cook, stirring, 4 minutes or until onions soften. Add garlic and cook 1 minute. Stir in diced tomatoes. Top with chicken. Pour chicken stock over chicken. Bring liquid to a boil.
  3. Cover and cook in pan for 20 minutes. (you can place in the oven for this step if your pan is oven safe)
  4. Mash some of the beans and stir into pan. Cover and cook for another 10 minutes, or until chicken is ready.

Tuscan Chicken with Beans

Mushroom & Potato Soup

Prep Time: 10 mins     Cook Time: 30 mins     Total Time: 40 mins

Ingredients

2 tablespoons of Oil
1 Brown onion
1 garlic clove
1 tsp dried thyme leaves
400 gm Potato peeled and chopped
250 gm mushrooms sliced
4 tsp of vegetable stock powder (bag 1) mixed with 4 cups of water
Optional Cream to serve
Salt and Pepper to taste.

Directions

  1. Heat oil in large saucepan over medium heat add onion, garlic and thyme, cook, stirring for 5 minutes until onion is soft. Add potato and cook 5 minutes, until potato starts to soften.
  2. Add the mushrooms and stir over heat for 3-5 mins, add vegetable stock mixed with water, bring to boil. Reduce heat to medium and boil gently, stirring occasionally, for 7-10 minutes.
  3. Blend or mash to desired consistency. Return to heat and simmer until warmed through. (do not boil) Add salt and pepper to taste.
  4. Ladle into bowls if adding cream swirl in bowl before serving.
  5. Serve with crusty bread.

Mushroom and Potato Soup

Museli Slice

Prep Time: 5 mins     Cook Time: 20 mins     Total Time: 25 mins

Ingredients

125g butter
2 Tablespoons Golden Syrup
1.5 Cups Museli
1/2 Cup Sultanas
1/2 cup sugar
1/2 cup coconut
1/2 Cup Self Raising Flour

Directions

  1. Melt butter and golden syrup on stove top or in microwave until melted, stir to mix.
  2. Mix all dry ingredients in bowl.
  3. Place melted honey and butter with dry ingredients and mix well.
  4. Place in greased tray approx 20 x 30cm and press down.
  5. Bake in 180 c oven for 15-20 mins. until lightly brown.
  6. Cool in tray and slice.

Museli Slice

Brown Lentil Dahl Curry

Prep Time: 5 mins     Cook Time: 35 mins     Total Time: 40 mins

Ingredients

2 tbsp oil
4 garlic cloves, finely minced
1.5 tbsp ginger, finely minced
1 onion, finely chopped
2 tbsp curry powder
1/2 tsp tumeric powder
1/2 tsp cayenne pepper
pinch of salt and pepper
1 can of lentils
1 can (400 ml) coconut milk
1 can  tomato, crushed
2 cups (500 ml) water
optional to serve greek yoghurt

Directions

  1. Place oil in large saucepan (3 litre) on medium heat. Add onions, garlic and ginger. cook until tinged golden and onion soft.
  2. Add spices and cook for 1-2mins.
  3. Place all other ingredients and stir well. bring to simmer , place on lid and simmer for 20 mins, stirring occasionally, to ensure it does not stick to bottom of pan.
  4. Remove lid and simmer for 10 mins to reduce sauce . (lentils should be soft and sauce thickened and creamy.
  5. Serve in bowl with greek yoghurt.

Brown Lentil Dahl

Cheesy Taco Pasta

Prep Time: 5 mins     Cook Time: 20 mins     Total Time: 25 mins

Ingredients

1 Tablespoon Oil
400 gm Pasta shells or spirals
500 gm beef mince
1 packet taco seasoning or see note (homemade seasoning)
3/4 cup water
1 jar of salsa
1 can kidney beans
1 cup shredded cheddar cheese

Optional:
Packet of Corn Chips to serve
Sour Cream
Avocado

Directions

  1. Cook the pasta according to the directions on the packet and drain.
  2. While pasta is cooking, heat oil on medium heat mince to the pan and brown well. Drain fat and add the taco seasoning, kidney beans and water, stir and simmer until water is absorbed.
  3. Add the pasta back into the pot and mix with the salsa and cheese.Stir to combine. Serve immediately.

Optional: Delicious served with Corn Chips, Avocado and Sour Cream.

Note: Taco Seasoning Homemade
1 tsp chilli powder
1 1/2 tsp ground cumin
1 1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1/4 tsp cayenne pepper

Cheesy Taco Pasta

Banana Caramel Dumplings

Prep Time: 15 mins     Cook Time: 15 mins     Total Time: 30 mins

Ingredients

Sauce
3/4 cup brown sugar
235gm or 2/3 cup golden syrup
500ml water
40g butter
1 tsp cinnamon

Dumplings
40gm butter
1 1/3 cup of SR Flour
90g golden syrup (extra)
1/4 cup milk
1 medium banana (mashed)

Directions

  1. Place brown sugar, golden syrup, water, cinnamon and 40 gm butter in a large saucepan, stir over low heat until sugar dissolves. Bring to a simmer and simmer for 2 mins.
  2. Meanwhile place flour in a bowl, rub in 40gms butter with fingertips. Stir in extra golden syrup and milk and mashed banana.
  3. Drop level dessertspoons of dumpling into simmering sauce. Cook Covered for 15 mins or until dumplings are puffed and cooked.
  4. Serve dumplings with sauce. (ice cream is a great addition if you are being a little naughty)

Banana Caramel Dumplings

Cauliflower Soup

Prep Time: 20 mins     Cook Time: 30 mins     Total Time: 50 mins

Ingredients

1/2 medium cauliflower
300 gm potato chopped
1 clove garlic
2 tsp vegie stock mixed with 750ml water
1 onion diced
1 tbsp oil
Pinch of Salt and pepper
Optional: Cream to serve

Directions

  1. Heat oil in a large saucepan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add cauliflower and potato. Cook, stirring, for 5 minutes.
  2. Add stock. Season with pepper. Cover. Bring to the boil. Reduce heat to medium-low. Simmer for 15 to 20 minutes or until potato is tender. Set aside for 5 minutes to cool slightly.
  3. If you would like smooth, blend in batches with blender or stick blender. Return to pan over low heat.

Optional: Add cream to serve

Cauliflower Soup

Cranberry and Museli Slice

Prep Time: 10 mins     Cook Time: 20 mins     Total Time: 30 mins

Ingredients

2 tbsp margarine
2 tbsp honey
1 tsp vanilla essence
2 ½ cups museli or oats with assorted nuts
1/3 cup dried cranberries
1/3 cup seeds (linseed, pepitas, sunflower seeds)
1/3 cup desiccated coconut
1/3 cup wholemeal flour
1 egg, beaten
4 tbsp reduced-fat milk
2 tsp cinnamon

Directions

  1. Preheat oven to 180°C.
  2. Line a 20cm square baking tin with baking paper.
  3. Melt margarine, honey and vanilla essence in the microwave or in a small saucepan on a low heat. Combine all ingredients in a large bowl.
  4. Press into baking tray and bake for 20 minutes or until golden.
  5. Allow to cool completely before slicing into bars.

Cranberry and Muesli Slice
